Bourbon & Maple Chicken Wings

Cooking Instructions:
- Preheat a gas or charcoal grill to a moderately hot temperature, 350-375°F; if using coals, wait until they turn white-hot.
- Melt the butter in a saucepan set over medium heat. Whisk in the onion powder, bourbon, maple syrup, tomato paste, salt, black pepper, and cayenne pepper; bring to a gentle simmer and cook, stirring occasionally, until thickened, 3-4 minutes.
- Place the chicken wings on a large platter or baking sheet and pat dry with paper towels; pour about half the bourbon-maple glaze over them, turning to coat. Pour the remaining glaze into a large bowl and set aside.
- When the grill is ready, brush the grates with a little oil. Arrange the chicken wings on the grill and cook, turning a few times, until cooked through and lightly charred, 25-35 minutes.
- When ready, transfer the wings from the grill to the bowl of reserved glaze; toss to coat.
- Arrange on a serving plate or platter and garnish with cilantro, scallion, and sliced chili peppers.
