Roasted pepper hummus in a bowl

Hummus is a great snack or meal to eat at any time of the year thanks to its bountiful fiber and fat content. However, with the summer sun bringing peppers and chilis into the forefront, now is a great time to spice up your regular hummus with a bunch of red flavor! This roasted pepper hummus is everything a summer hummus should be–creamy, filling, and a small tinge of that sweet spice derived from the roasted peppers. Roasted Pepper Hummus with Tortilla Chips

makes 4 servings
50 minute prep time
difficulty: easy
cannot be frozen


1 large red bell pepper
olive oil, for drizzling
1 red chili pepper
17 oz / 2 cups canned chickpeas, rinsed and drained
1 lemon, juice
2 garlic cloves, crushed
1/4 tsp ground cumin
1 pinch paprika
3 oz | 1/3 cup tahini
4 tbsp water
kosher salt
1 tbsp fresh parsley, chopped
2 tbsp extra-virgin olive oil
tortilla chips, to serve


1. Preheat oven to 400°. Place the bell pepper on a baking sheet and drizzle with olive oil. Roast for
15 minutes.
2. Add the chili pepper to the tray and drizzle with more olive oil. Roast for 15-20 minutes until
lightly charred. Place in a plastic bag, tie, and let cool.
3. When cool, peel the skin from the pepper and chili pepper and remove the seeds.
4. Combine the flesh with chickpeas, lemon juice, garlic, cumin, coriander, paprika, tahini and water
in a food processor. Pulse until creamy. Add salt to taste.
5. Serve hummus in a bowl with a garnish of chopped parsley, a drizzle of extra-virgin olive oil and
the tortilla chips on the side.
