chicken taco slow cooker recipe

For a lot of us, coming home from work and finding the energy to make dinner can be a struggle. Fortunately, with the advent of the wondrous slow cooker, it’s easy to come home and have dinner practically ready to eat! Our favorite slow cooker recipe to make is chicken tacos. They are SO scrumptious.

Prep time: 15 min
Difficulty: easy

Ingredients:
4 boneless chicken breasts freshly ground black pepper
2T taco seasoning
1/2 red bell pepper (sliced)
1 yellow onion (sliced)
1 jalapeño (diced)
4 garlic cloves (minced)
1 1/2 cups chunky salsa
12 small flour tortillas

Method:
Season both sides of chicken with taco seasoning. Pour 1/2 cup of salsa into the bottom of a 6-quart or larger crockpot. Place chicken breasts over the salsa then add peppers, onion, garlic and jalapeño. Pour remaining salsa over chicken and vegetables and replace lid. Cook on low for eight hours or on high setting for four. Shred chicken with forks and serve with tortillas and your favorite toppings.
